When enthusiasm, professionalism and challenge go hand in hand
Javier Goya, Javier Mayor and David Alfonso, after years of friendship inside and outside the kitchens, worked together at El Faro, one of the restaurants for managers of Banco Santander's Ciudad Financiera, in Boadilla del Monte (Madrid). "It served us as an experience to clear our heads after a few years in various haute cuisine restaurants."
Three years later, they decided to join forces and embark on a project of their own. The three chefs became partners and entrepreneurs to found “the restaurant we would like to eat at”. It was not an easy start since it started with some limitations, among them that they did not have much to rent a place. They found a space in the Barrio de Las Letras that, despite needing a lot of work, could fit the idea they had in mind.
Preparations for the opening were tough. "Even I, who am always very positive, had moments of wanting to throw in the towel because of the problems with the works," admits Javier Goya, who with his partners, family and colleagues was in charge of chopping, painting and preparing the premises.
